Recipe: Turkey Meatballs

Ingredients:

  • 6 oz Grated zucchini, when squeezed 4.25 oz
  • 1 lb 93% Lean ground turkey
  • 1 Clove garlic, grated
  • 1 tbsp Grated red onion
  • 1 tsp Kosher salt and fresh pepper
  • Avocado oil spray or 1 tbsp olive oil

Directions:

1. Squeeze all the moisture from the zucchini with paper towels. In a large bowl, combine ground turkey, zucchini, garlic onion, salt and pepper.

2. Make equal meatballs, 1.5 inch each. Place in an oven tray about 1.5 inch space between them. Spray lightly with avocado oil, or brush with olive oil.

3. Bake turkey meatballs at 375°F for 15 minutes for a 1.5 inch meatball, or until the meatballs reach an internal temperature of 165°F on a meat thermometer. When you cit into a meatball, it should be cooked through. Once out of the oven, through into the marinara sauce, or add onto plate.
