Recipe: Stuffed Grape Leaves (Yalanji)

Ingredients:

  • 1 jar of grape leaves (wash in cold water)

  • 1 large finely diced onion in
  • 4 tbsp of olive oil
  • 3 fresh tomatoes, finely diced
  • 4 cups short grain rice
  • 1 tsp of Salt, mint and red paprika
  • 1 tsp of Allspice
  • 2 bunches of chopped parsley
  • 3 fresh lemons (squeezed)

Directions:

1. Sauté onions in olive oil until translucent. Add tomato and rice.

2. Then add the juice of one lemon and all the remaining ingredients.

3. Let mixture cool. Then take one grape leaf and place 1 tbsp of mixture in the center of the leaf.

4. Roll by folding in the sides and roll up each leaf.

5. Place the rolls in a large pot. Create one layer then stack rolls to fill the pot. Add some salt at the top.

  • It is very important to use a round plate and heavy object like a tea kettle full of water so the leaves will not move and open while cooking.
  • Add water to the level of the plate, and cook on medium heat until it starts to boil, and then on low heat for 2-3 hours.
  • Halfway, add the juice of 2 lemons and 1/4 cup of olive oil.
