Recipe: Red Lentil Soup

Yield: 6-8 servings (cups)

Ingredients:

  • 2 tbsp Extra virgin olive oil
  • 1 large onion, chopped
  • 1 Carrot, chopped
  • 1 tsp Cumin
  • 1 tsp Curry powder
  • 1 tsp Curcumin
  • 6 cups Water
  • 2 cups Red lentils, rinsed and drained
  • Salt and black pepper to taste (easy on the salt!)

Directions:

1. Rinse and dry lentils

2. Add the water, lentils and chopped carrots to a saucepan

3. Fully cook lentils (20-25min)

4. Blend the contents of the saucepan with a blender to the consistency you like. (i prefer it a bit chunky)

5. In a separate sauce pan, heat the olive oil

6. Add cumin, curry, and curcumin

7. Add the onion and sauté until shimmering

8. Add the blended soup mix (you may add more water at this stage if you like it less thick)

9. Bring to a boil, then simmer for 15min.

10. Once ready to enjoy your cup of soup, add some lemon juice to highlight your experience!
