Turkey Patty with Sautéed Spinach, Crispy Roasted Potatoes, and Lemon Dijon Yogurt Sauce

Plate Structure:

  • Protein: 4 oz turkey patty
  • Vegetables: 2 cups sautéed spinach
  • Carbohydrate: 3/4 cup roasted potatoes
  • Sauce: 2 tablespoons

Ingredients:

Turkey Patty

  • 5 oz ground turkey (93% lean)

  • 1 tbsp beaten egg

  • 1 tsp Dijon mustard
  • 1 tsp chopped parsley
  • 1/2 tsp garlic, minced
  • 1/4 tsp dried oregano
  • 1/4 tsp kosher salt
  • Pinch black pepper

Crispy Roasted Potatoes

  • 1 medium Yukon gold potato (about 5oz), diced
  • 1 tsp olive oil
  • Pinch kosher salt
  • Pinch black pepper
  • Pinch garlic powder
  • Pinch paprika

Sautéed Spinach

  • 2 cups fresh spinach

  • 1 tsp olive oil
  • 1 garlic clove, thinly sliced

  • Pinch kosher salt

  • Black Pepper

  • Squeeze of fresh lemon juice

Lemon Dijon Yogurt Sauce

  • 2 tbsp plain Greek yogurt
  • 1 tsp Dijon mustard
  • Lemon zest

  • 1 tsp fresh lemon juice
  • Pinch lemon zest

  • 1/2 teaspoon honey

  • Pinch salt and black pepper

Directions:

1. Prepare the Potatoes

Preheat oven to 425°F. Toss diced potatoes with olive oil, salt, pepper, garlic powder, and paprika. Spread on a baking sheet and roast for 30–35 minutes, flipping halfway, until golden and crispy.

2. Make the Turkey Patty

In a bowl, gently mix all turkey ingredients. Form into 1 patty.

Cook:

  • In a pan over medium heat, or
  • In the oven at 400°F for 12–15 minutes

Cook until internal temperature reaches 165°F.

3. Sauté the Spinach

Heat olive oil in a pan over medium heat. Add sliced garlic and cook briefly until fragrant. Add spinach and cook until just wilted. Season with salt and a squeeze of lemon juice.

4. Prepare the Sauce

In a small bowl, mix yogurt, Dijon, lemon juice, zest, honey, salt, and pepper until smooth.

To Serve:

  • Place roasted potatoes on the plate
  • Add sautéed spinach (this should be the largest portion)
  • Top with the turkey patty
  • Finish with a spoonful of yogurt sauce
