Recipe: Mom’s Creamy Hummus

Ingredients:

  • 2 cups boiled chickpeas (or canned chickpeas), fully drained and rinsed
  • 2 tbsp tahini
  • 2 1/2 tbsp plain whole milk yogurt
  • Juice of 1 lemon
  • 1/2 tsp salt (adjust to taste)
  • 2-3 tbsp water (as needed for consistency)
  • 1/2 tsp ground cumin for garnish
  • Paprika, for garnish (optional)
  • Chopped parsley, for garnish (optional)

Directions:

1. Add all ingredients to a blender or food processor.

2. Blend until very smooth, scraping down the sides as needed.

3. If the consistency is too thick, add a little water or olive oil and blend again.

4. Taste and adjust seasoning if necessary.

5. Garnish with paprika, cumin and chopped parsley.

6. Serve with a drizzle of olive oil and enjoy with pita bread, veggies, or as a spread.
