Recipe: Ginger Kissed Oranges with Vanilla Bean

Yield: 4 Servings


  • 6 Large oranges
  • 1 cup Yogurt (low fat)
  • 1 tsp Grated Ginger
  • 1/2 cup Sliced or silvered almonds
  • 1 Egg white
  • 2 tsp Sugar
  • 1 tsp Orange Zest
  • 1/2 Vanilla bean pod
  • 1 cup Mixed berries
  • Couple sprigs of mint (washed)


1. Set oven to 350 degrees. Toss almonds in egg white and sugar. Arrange on baking sheet in a single layer. Bake until light brown in color. Cool.

2. Wash and dry oranges. Grate one orange to get the zest.  Carefully remove pith and segment. Squeeze remaining skin to remove juice.

3. Slice vanilla bean length wise and remove seeds with a pairing knife. Add to orange juice along with the grated ginger. Chill.

4. Add zest to yogurt.  Arrange on plate with yogurt. Garnish with berries of choice and top with sprinkle of almonds and mint. Enjoy!

Note: For a special treat brush some melted chocolate on the mint. Chill. Carefully remove the mint leaf and what remains is a chocolate leaf!
