Lemon Dijon Yogurt Sauce
Directions:
1. Prepare the Potatoes
Preheat oven to 425°F. Toss diced potatoes with olive oil, salt, pepper, garlic powder, and paprika. Spread on a baking sheet and roast for 30–35 minutes, flipping halfway, until golden and crispy.
2. Make the Turkey Patty
In a bowl, gently mix all turkey ingredients. Form into 1 patty.
Cook:
- In a pan over medium heat, or
- In the oven at 400°F for 12–15 minutes
Cook until internal temperature reaches 165°F.
3. Sauté the Spinach
Heat olive oil in a pan over medium heat. Add sliced garlic and cook briefly until fragrant. Add spinach and cook until just wilted. Season with salt and a squeeze of lemon juice.
4. Prepare the Sauce
In a small bowl, mix yogurt, Dijon, lemon juice, zest, honey, salt, and pepper until smooth.
To Serve:
- Place roasted potatoes on the plate
- Add sautéed spinach (this should be the largest portion)
- Top with the turkey patty
- Finish with a spoonful of yogurt sauce
