Recipe: Ancient Grains Foccacia

Directions:
1. Place water, oil, oregano, and salt in a bowl. Add flour and yeast. Stir to combine — the dough will be sticky! Cover with plastic wrap and let rest for 30 minutes.
2. With wet hands, turn the dough in on itself for 8 turns. This will help create layers. Cover again with plastic wrap and rest for another 30 minutes. Repeat the turning of the dough once more.
3. Preheat the oven to 400°F. Place the reserved 1 tablespoon of oil on the bottom and sides of a 9×13 pan. Sprinkle with cornmeal. Place the dough in the pan, pressing gently to spread it evenly. Cover the pan with plastic wrap and let rest for 45 minutes, or until doubled in size.
4. If you wish, you can drizzle a bit more olive oil on top of the dough and sprinkle with cheese. Bake for approximately 35 minutes, or until the internal temperature reaches 200–210°F.
5. Remove from the oven and place on a wire rack to cool. Enjoy!
