Recipe: Steamed Mussels in White Wine & Garlic

Ingredients:

  • 1 pound Mussels (about 12-15), cleaned and debearded
  • 1 small Onion, finely chopped
  • 4 Garlic cloves, chopped
  • 1/4 tsp Red pepper flakes
  • 1 cup Dry white whine
  • Salt and freshly ground black pepper, to taste
  • A handful of fresh parsley, chopped

Directions:

1. Prepare the mussels:

2. Rinse the mussels under cold water. Discard any broken shells or that don’t close when tapped.

3. Sauté the aromatics:

4. In a large pot with a lid, heat a drizzle of olive oil over medium heat. Add the chopped onion and cook for 2-3 minutes until soft. Stir in the garlic and red pepper flakes; cook for another minute until fragrant.

5. Add wine and mussels:

6. Pour in the white wine and bring to a gentle simmer. Season lightly with salt and pepper. Add the mussels and cover the pot with a lid.

7. Steam:

8. Let the mussels steam for 5-7 minutes, shaking the pot occasionally, until the shells open. Discard any that remain closed.

9. Finish and serve:

10. Sprinkle in the chopped parsley and give everything a gentle toss. Taste the broth and adjust seasoning if needed. Serve the mussels in bowls with the broth spooned over. Crusty bread or lemon wedges make great sides.
